草鱼洗净后在表面切花刀,2面都要切,方便入味;

把鱼腌制一下,放入2勺料酒,

这时把肥肉去皮,中间切一刀然后横切剔出部分肥肉,另一半也剔出;

水开后,加少许冷水给水降到90度左右,

放入草鱼,小火焖煮4分钟,不要让水煮开,
