【第一次在家做生蚝,没有清蒸而是裹粉炸了,外脆里嫩,鲜美无比】对于内陆人平时吃海鲜一般就是价格高还不新鲜。即使物流这么发达的今天,与海边直接打捞上岸下锅这种新鲜度还是不能比的。记得之前去潮汕的时候,特意去了当地的菜场,那种小海鲜真的又新鲜又便宜。印象最深的就是那种小生蚝也叫海蛎子,成堆成堆放在摊位边,摊主娴熟地把外壳撬开,一颗颗饱满的蚝肉滑到盆里,不一会就是满满一盆。价格很便宜几块钱就能买上一袋。平时我们都爱的蚵仔煎就是用它做的。
生蚝含有多种氨基酸和维生素,以及多种矿物质,具有滋补强壮、强健筋骨,提高机体免疫力的作用。以前在路边小吃摊吃过炭烤生蚝,也在自助餐厅吃过生的生蚝,说实话我还是喜欢熟的口感。今天花了20元买了10个中等个的生蚝,摊主帮忙把壳撬开了,我还是第一次自己在家做生蚝,没有清蒸也没炭烤,而是把它裹了面糊炸了,外脆里嫩,鲜美无比,真的好好吃呀!
【炸生蚝】
主料:生蚝10个;
辅料:调和油、料酒、盐、葱姜、自制炸粉、玉米淀粉、面粉、椒盐粉;
做法:1、买回的10个生蚝,已经让摊主撬开了;

2、掰开后用小刀把蚝肉取下来;

3、把取下的蚝肉放入盆中加点面粉和清水抓匀,用清水多过滤几遍;

4、洗净的蚝肉沥干水分放入盆中,加点料酒、盐、白胡椒粉、姜汁拌匀腌制一会;

5、准备好自制炸粉:面粉50克、玉米淀粉15克、糯米粉5克、泡打粉1克、吉士粉5克、盐1克放入碗里拌匀;

6、加入适量清水和调和油搅拌均匀;

7、取一个蚝肉先裹上一层玉米淀粉;

8、再放入调好的炸糊中裹上;

9、锅中加热适量油,放入裹好炸糊的生蚝;

10、炸至表面金黄色即可捞出,再复炸一次。用厨房纸巾吸干油;

11、均匀撒上少许椒盐即可食用;
