面粉150g

酵母4g
清水220g
灰枣适量
做法与步骤
1、将玉米粉和面粉还有酵母放在盆里,用筷子搅和均匀

2、加入220克温水一边加一边用筷子搅和

3、将面和成比面团软比面糊糊稠的样子,放在温暖处发酵

4、将灰枣放在清水里煮3分钟晾凉(煮过的枣做发糕会更甜,而且比较饱满)

5、看到和好的面表面有泡泡而且涨高了就表示发酵好了

6、用豆腐模子的四框放在蒸锅里,里面铺上打湿的屉布

7、将面分成两半,一半倒进模子里

8、铺上一层枣

9、再将另一半倒进去表面铺一层枣

10、然后盖上锅盖开始二发,二发看到明显涨高了就可以了,我大概二发了50分钟

11、二发结束以后开大火蒸制,锅开以后蒸45分钟就好了(因为我怕木头模子不爱导热所以蒸的时间久一些)

12、蒸好以后切小块食用

1、我常听老人说做窝头发糕要用中粗的玉米面,他们说细的玉米面粘度高,适合做两样面切条吃,如果做窝头啥的会口感发粘,如果你不喜欢中粗的也可以用细的玉米面试一试。
